Killer Mac 'n Cheese is Back!

Gum Tree Farm is glad to announce that they now have chickens laying green eggs! Chuck has Jumping Jack Chipotle Pepper Cheese and Baby Swiss, and Yummy Goodness has Killer Mac 'n Cheese listed again this week! Can we he hear a "HOORAY"! Did you get a chance to see the cabbage Cromwell delivered last week? I know he said 6-8 lbs, but oh my goodness! It filled a grocery bag! We are baking ours tonight as he suggested, can't wait!

Please keep Chuck (Uncle Chuck's Seafood) and Greg Pappas (our Town Center host at Eclectic Designs) in your thoughts and prayers. Chuck just had Carpal Tunnel Surgery and Greg has had heart surgery this week. Greg has made amazing strides thus far but he still needs all our prayers.

Hanover Salad and Ground Turkey this week!

What a wonderful pick up this week! The weather was beautiful and the food amazing! Hope you had a chance to see the Foccacia bread-it is huge! We were all going crazy over the Gingerbread Men, they were adorable! It was exciting to see all the other specialty products as well: Jams, Creamed Honey and beautiful smelling soaps! All the "yummy Goodness" stuff smelled amazing, as always. We have already heard that dogs are enjoying Pierre's food for them, that is so exciting!
Our son just informed us that there are only 16 more days until Christmas! Oh my goodness! How did that happen? Hope everyone has a lovely weekend!

Have you heard the news? A baby Browder is on the way! Amanda is due April 28 and they are finding out what they are having in a few weeks! All we know is it will be a Hokie, that is for sure!

Coastal Farms will be closed the week between Christmas and New Years

Okay, so you have always dreamed of having a personal chef, but reality is...well, all of our reality, $$$. Holidays are here, you are busy and you still yearn for one. Well, Yummy Goodness has solved your problem. And guess what else? If you are just looking for some great things to take to parties, that look and taste divine, Yummy Goodness has you covered there as well!

We also have some new focaccia bread, a perfectly plain one that you can use for pizza or anything that you can imagine or a super yummy cheddar cheese one!

Coastal Farms will be closed the week between Christmas and New Years for a much needed vacation for our family, hosts, suppliers, volunteers and fabulous employees. Coastal Farms has not taken the two weeks a year that is in its contract since opening April of 2010, and feel that this is the perfect time for rest and reflection as we approach what we anticipate to be another wonderful year!

Altered Schedule for Thanksgiving Week

The kids and I just returned from a dear friend's father's funeral. *sigh* Sometimes it takes a funeral to make us all pause to think about those that mean so much to us. We would be remiss to not mention how important our Coastal family has become to us. From our producers, volunteers, amazing employees, to our very special customers. Please know that each and every one of you mean the world to us! Thank you so much for being a part of Coastal Farms.

Speaking of Thanksgiving, we will have an altered schedule for what would be our normal pick up on Thanksgiving Thursday. This way you will be able to shop Coastal for all your Thanksgiving dinner needs! The window will open Wednesday 11/16 at 6pm and it will close 11/19 at 10 pm, pick up will be Tuesday 11/22 (your normal time).

New things to spice up your fall!

New this week! Spicy Cayenne and Habanero peppers to warm up any dish! Also, we have sliced Jalapeno Peppers and Cayenne Peppers in a jar, a wonderful, colorful jar to have and use! To start your mornings there is a new flavor of oatmeal; maple, pecan, autumn spice. For a taste of local Virginia, we have Autumn Stuffed Red Peppers. You can go traditional with turnips, or try Pink Lady Apples, a crisp snack for a cozy afternoon or Asian Persimmons, a variety you can eat like an apple. We have a new pick-up site in Carrollton located at the The Virginia BBQ restaurant! What a wonderful place to pick up your stuff and a warm yummy dinner while you are there! The owners are Mike and Julia Peterson and are good friends. We know that our Carrollton friends will be in great hands!

Chuck Macin, One of Coastal Farms' Finest!

Chuck Macin, a real go-getter!

Coastal Farms would be lost without Chuck Macin of Uncle Chuck's Seafood. Since becoming one of our first producers, he has always looked for any opportunity to help Coastal Farms. If you pick up from either Town Center or Central Virginia Beach, it is because Chuck has delivered food to your site. He truly is a team player and and an absolute joy to work with. At one point we were desperately in need of cheese. Chuck did extensive research on VA cheese producers, picked some of the finest to work with and filled that gap for us. All of us who lovingly prepare your orders each week look forward to Chuck's arrival each Thursday, he truly is "our very favorite fisherman and cheese monger"!
Chuck was recently featured in the Virginian Pilot and we are so very happy for him! These are just a few of the reasons why Chuck is receiving the Coastal Farms' Go-Getter Award!

Fishmonger, Uncle Chuck's Seafood & Produce in the Virginia Beach Farmers Market


I WAS BORN IN BALTIMORE almost 70 years ago, but I came down here in 1965, not long after graduating from college, and never left. I came here to take a job with Marriott Hot Shoppes - I had just gotten married - but after moving three times in less than nine months I answered a Sunday ad in The Virginian-Pilot for a position at the Ford plant in Norfolk. By Monday afternoon, I was hired.
Wound up working at the plant there for 30 years. You wonder how you lasted that long. So how did I get to this? Through lots of little steps and half steps, really.
My mom always told me that if you knew how to cook, you would never starve to death. After doing some of the normal kid jobs - cutting the grass, shoveling snow - I started as a bag boy in a grocery store. Not long after that, I graduated to a cannery in Baltimore, Crosse & Blackwell, where they made pickles and canned tomatoes and ketchup, things like that.
So I began to notice I liked being around food, cooking. My aunt owned a restaurant in Baltimore and I started working there, which drew me a little more in the direction of kitchen work. Her big dish was crab cakes. I washed dishes, bused tables and gradually picked up how to cook.
After graduating from college, I went to work with Marriott. They sent me to a cooking school, where they did everything from scratch. I thought I was on track to stay with them when they gave me a job in the Norfolk area, but soon figured out it wasn't going to work. Patton didn't move that much and they were shooting at him!
It was kind of strange. I was on this path, heading in one direction. And then all of a sudden, there I was at the Ford plant, doing something else. So all of that interest in food and cooking sat on the back burner for decades.
After I retired in 1996, I did all the usual retirement things, watched too much TV. But retirement is a bore. I started getting out a little more, connecting with people. I joined the Great Bridge Fisherman's Association and got to know some people. Then I got involved with the Ruritan and met more people.
So in 2003, after being asked by a friend in the seafood business, I started selling seafood off the back of a truck. About a year later, I set up shop in the Virginia Beach Farmers Market, where I'm still going.
I started with scallops, shrimp and crab meat - and that was it. But then people started asking me if I could get this or that for them, some little thing. And things began to happen. The business grew. That's how all of this mess started.
I'm a fishmonger for the little guy. I carry stuff that nobody else carries. I carry conch. I carry octopus - you don't find that at grocery stores.
When the season opens up, I'll carry goofy stuff like cockles, from New Zealand. They're a real small clam, but the intensity of the salinity is three to four times that of our local clams. It gives a more intense taste to a dish you're making.
For Father's Day, I'll have crawfish, flown in from Louisiana. l'll also have steamer clams from Maine, because customers ask for these kinds of things.
People do not mind paying for quality, but don't charge quality prices for an inferior product. That's my keystone.
I'll carry everything that I can find locally, with the exception of blue crabs, only because they have special refrigeration needs. You can't keep them in anything below 43 degrees.
I do, though, carry five different kinds of clams: pasta, little, middle and top necks, as well as cherrystones. I also carry six different kinds of oysters in eight different sizes - two from the western shore, one from Lynnhaven and three from off of the Eastern Shore.
It's a labor of love and you make a little bit of money. Hey, I'm retired. I'm only open four days a week. When I look back at everything, I kind of scratch my head. You just don't know - you don't know what's going to pop up.

Recently, Coastal Farms crowned Price Clarke (Prize's Pantry) with the "Go-Getter" award. What is this award you ask? Well by general definition, a go-getter is a compliment for someone who is extremely ambitious and positive. When you need something done, they are the ones you can count on.

Price is constantly asking us how she can help out with Coastal Farms. She is always extremely generous with her products for Coastal events and even delivers products to one of our pick up sites. She has also recruited several customers! Recently she was listening to a radio talk show and the discussion was about buying local products. She just jumped on her phone and told the radio audience all about Coastal. Now that took some guts! Sources tell us that she did a fantastic job representing Coastal! We can't imagine anything different!

We are so proud to be working with such extraordinary people as those of you that are a part of the Coastal Farms family: Our producers, customers, pick-up site coordinators, and staff, we love you all so much, and look forward to giving out more awards in the future! I cannot find my old recipe, this one seems to come pretty close. It used more milk to make a soup and I think I added a couple of other spices - celery seed or salt, etc. Should be pretty close though.

CREAMED PEAS & NEW POTATOES
Printed from COOKS.COM

1 lb. whole tiny new potatoes
1 & 1/2 c. shelled peas
1/4 c. chopped onion
1 tbsp. butter
1 tbsp. all-purpose flour
1/2 tsp. salt
Dash of pepper
1 c. milk
Scrub potatoes; cut any large potatoes in half. lf desired, remove a
narrow strip of peel from around the center of each potato. In a medium
saucepan cook potatoes in a small amount of boiling salted water for 10
minutes. Add peas and cook 5 to 10 minutes more or until tender.
Drain.
ln a medium saucepan cook onion in butter until tender but not brown.
Stir in flour, salt and pepper. Add milk all at once. Cook and stir until
thick and bubbly. Cook and stir 1 minute more. Stir in potatoes and
peas; heat through. Season to taste.

Strawberries, just in time for Mother's Day

What better way to say "I LOVE YOU , MOM" than with wonderful items from the Coastal Farm's producers. Introducing Windhaven Farms and Goerger Family Farm

The Goeger Family has been involved in agriculture for many years. Bob is a retired extension agent, and Kevin works for NRCS. Both enjoy farming and have wonderful specialty crops such as flowers and pumpkins.

Windhaven Farm is a family-run farm that has been raising cattle for over 40 years. Their beef is all natural, antibiotic and hormone free.

Bees Knees Apiaries

Our honey bee colonies are managed naturally without the use of acaracides or antibiotics. Our honey is not processed with heat, but only strained to remove wax, preserving its natural enzymes and pollen. We harvest only surplus honey, leaving our bees adequate food stores for their winter survival.

Our beeswax is slowly melted using the sun's energy in our solar wax melter, preserving the natural yellow color. It is then strained of impurities and and crafted into candles and soaps.

25 Ways To Use A Zucchini

1. Zucchini bread
2. Cream of zucchini soup (can be served cold or hot)
3. Chow chow relish
4. Zucchini cheese pie in a potato crust
5. Add some to minestrone soup
6. As an ingredient in ratatouille
7. Summer squash hummus (yellow summer squash works well)
8. Pick them as babies and slice them thin, use raw in salads
9. Beer batter fry them
10. Tempura them
11. Zucchini Frittata
12. Pizza Topping
13. Cut them in 1/4 inch slices and dehydrate them or sun dry them. Use them in backpacking food recipes.
14. Zucchini Chocolate Cake
15. As an ingredient in vegetarian paella.
16. As an ingredient in gumbo.
17. Zucchini Brownies
18. Cut thinly and use for lasagna noodles
19. Cut in half and stuff (call it a boat for the kids!)
20. Pickle them/ bread and butter
21. Grate then add equal parts cheese and use for enchiladas
22. Mock Apple Pie
23. Mock Crab Cakes
24. Zucchini Slaw
25. Make oatmeal/ zucchini muffins and call them cupcakes (again, for the kiddos)
